Maroccan Carrot Salad

Sliced boiled Carrots flavored with spices, herbs, lemon juice, garlic and olive oil is a popular side dish salad in Marocco.




The Ingredients

½ kg fresh carrots, peeled and cut into slices
2 cloves garlic, partially crushed
3 tablespoons lemon juice
2 tablespoons chopped fresh coriander (cilantro)
½ teaspoon salt
½ teaspoon cumin
½ teaspoon paprika
½ teaspoon hot paprika

4 tablespoons olive oil

Instructions

1. Boil the carrots in salted water until tender, (15 - 20 minutes). Strain, and immediately soak in cold water.
Strain again.

2. In a medium skillet, gently saute the garlic cloves in the olive oil for 2-3 minutes over low heat. Discard the garlic, and add the carrots, lemon juice, coriander, and spices.


3. Saute over low heat for two minutes, and remove.

4. Serve either warm or chilled to your preference.
