Meatballs with Feta Cheese and Pine Seeds

A delicious snack or a main dish served with homemade tomato sauce and French Fries or fresh mixed green salad as side dish.




The Ingredients

For the meatballs
½ kilo ground beef
2 slices stale bread
1 large egg
1 red onion, grated
1 garlic cloves, crushed
2 tablespoons fresh mint chopped
2 tablespoons wine vinegar
Salt and pepper

For the filling
1 cup crumbled Feta cheese
1 tablespoon chopped mint
½ teaspoon of pepper
½ cup pine seeds

For frying
Wheat flour (optional)
2 cups olive oil

Instructions

1. Put the mince in a large bowl , add egg lightly bitten, chopped mint and onion, crashed garlic, salt and pepper to taste, vinegar and bread, soaked in water, squeezed and cradle.

Knead well all ingredients for 5 minutes, cover the bowl with wrapping foil and refrigerate for about 30 minutes.

2. In a small bowl mix the grated cheese, pepper and chopped mint.

3. Remove meat mixture from fridge. Take small amounts and form flat meat rounds.

4. Fill each meat round with a teaspoon of filling and carefully fold to  form a meat ball (the size of a ping-pong ball.

5. Continue on and prepare all the meat balls, place in a dish for latter. Flour the meatballs if you so wish.

6. Put the olive oil in a deep skillet and heat to frying. When hot, fry the meatballs until browned. Put absorbent paper on a plate, remove meatballs and lay on plate to let the oil.

7. Garnish with mint leaves and pine nuts.


8. Serve warm with homemade tomato sauce and French fries or spicy potato salad.

TIPS
Vinegar and good kneading make meatballs fluffy.
You may substitute the bread with 100gr. Porridge, very well grounded.
