White Bean Salad

The white beans, very rich in protein, can be cooked and served in many ways; i.e., as soup, salad, as well, with fresh vegetables and flavored with a variety of spices.





The Ingredients

2 cups white, dry beans, cooked
1 medium onion, cut into thin slices
2 tablespoons tender celery leaves, chopped
5 sundried tomatoes, preserved in oil, cut thin strips
1 medium carrot, grated
½ teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon sweet paprika
Salt and freshly ground black pepper to taste
100gr. Cheese (preferred spicy)

For the dressing
6 tablespoons extra virgin olive oil
4 tablespoons lemon juice
½ teaspoon lemon zest
1 teaspoon mustard powder


Instructions

 
 
 
 
 
1. Drain well the cooked beans and put in a medium bowl.
 











2. Add the chopped vegetables, spices, season with salt and freshly ground pepper and stir well.






3. Pour all dressing ingredients into a small jar, close it and shake firmly to homogenize the materials.

4. Transfer beans to a serving dish and drizzle with the dressing. Decorate with ​​cheese pieces, fresh celery leaves or parsley.


5. Serve and enjoy.


TIPS
  • If you like a spicy salad, add two chili peppers, seedless and chopped.
  • Accompany your salad with Kalamata olives and smoke herring fillets.
