Marinated Chicken

Very tender chicken marinated overnight in lemon, mustard and spices.

 



The Ingredients

1 chicken 1200gr. (whole or cut into 4 portions)
1 kilo small potatoes
½ cup olive oil

Marinate
¼ cup olive oil
1 lemon, juice
2teaspoons dried thyme or rosemary
2 tablespoons sweet mustard
3 tablespoons Greek yogurt
3 cloves of garlic, crushed
½ teaspoon grated fresh ginger
1 teaspoon sweet paprika
2 dried red chilies, seedless

Instructions

1. Clean and wash chicken well, strain, add salt and pepper to your liking.

2. In a medium bowl, mix together all marinates ingredients. Marinate chicken, put in Pyrex (do not use a metallic dish), cover with plastic and refrigerate overnight. The longer you marinate the better to gain more flavors.



3. Before baking, remove it from the refrigerator and let for 1 hour at room temperature.



4. Peel the potatoes, add salt and pepper to taste and ½ cup of olive oil. Toss well. Put potatoes in a baking pan; add marinated chicken and pour one cup of hot water over potatoes.




 5. Bake in a preheated oven at 200º C for 1½ hour, turn chicken on other side to bake evenly.
Check potatoes and if needed, you may add half cup hot water to soften.

6. Remove from the oven when chicken is golden brown and potatoes well done.

7. Serve chicken decorated with potatoes.
