Spice Cake with Olive Oil, Orange and Chocolate Drops

If you love “sweet” spices, this is a very fluffy, with spices and olive oil cake, no egges added, ideal for morning coffee or tea. This cake is delicious, because spices and orange make the difference! 
Spices can be dried aromatic leaves, seeds, fruits or roots.
We add then in food, sweets (cakes or marmalades), ice creams and liqueurs. 
Ancient medicine and botany books mention spices as very important drugs, ideal to treat various human diseases.





Ingredients

200 ml extra virgin olive oil
150 grams brown sugar
250 ml fresh orange juice
The zest of one orange
½ teaspoon ground cinnamon
½ teaspoon ginger powder
¼ teaspoon ground cloves
1 teaspoon baking soda
50 ml brandy
150 grams chocolate drops (bitter chocolate)
370 grams self raising flour, sifted



Instructions





In a bowl, add the oil, juice, orange zest, sugar and spices.
Beat by hand or with a whisk, until blended and melt the sugar well.















Mix baking soda in brandy and add to the above mixture. Beat again for a minute.














Then partially add flour and chocolate drops and mix well.













Put the cake mixture in a greased and floured cake of 24-26cm .
Bake cake at 160º C in air for an hour.








Taste with a knife, before remove from the oven.
