This is a simple, easy and tasty fish recipe.
Baked Salmon with herbs is an unforgettable combination.
3 medium fennel roots
2 tomatoes, peeled
4 green onions, chopped
1 teaspoon garlic, chopped
1 teaspoon ginger, grated
Salt and pepper
2. In a small bowl mix grated garlic and ginger with three tablespoons of olive oil and pour over salmon fillet.
Add salt and freshly grounded pepper to taste.
3. Cut off the green tops of fennel, keep aside for decoration. Remove and dispose the outer hard shelled fennel leaves then slice vertically.
4. Peel the tomatoes and dice. Wash, clean and chop the onions.
5. Put all vegetables in a bowl, add salt and pepper, the remaining oil, toss well.
6. Spread vegetables around salmon. Add ½ cup hot water.
Bake in a preheated oven at 180º C, until greens well done.
6. Remove from oven, de-skin carefully and serve with assorted vegetables. Decorate with fennel tops.
7. Enjoy with your favorite drink!

The Ingredients
(For two servings)
1 salmon fillet with the skin, about 600gr
½ cup extra virgin olive oil3 medium fennel roots

1. Wash the salmon fillet and wipe dry with kitchen paper. Put in a suitable Pyrex, skin down.
Add salt and freshly grounded pepper to taste.
