Apples are great seasonal fruits, tasty, juicy, perfect for filling in tarts, making jams, Cup Cakes or Strudel.

2 teaspoons baking powder
⅔ cup / 180 grams butter at room temperature
⅓ cup / 70 grams extra virgin olive oil
1 cup / 140 grams soft brown sugar
2 large eggs
½ cup / 120 grams fresh milk, warm
1 pinch of salt
2 tablespoons brown sugar
½ cup / 50gram chopped nuts
1 teaspoon ground cinnamon
½ teaspoon ground cloves
2.Peel and slice the apples. Put them in a bowl; add the spices, sugar and nuts. Combine the ingredients.
3.In a large bowl, beat butter and sugar until creamy. Add the eggs, one at a time, continuing beating. Then add the flour and milk alternately. Mix gently with a spatula, from bottom to center, to homogenize the ingredients to make a smooth mixture.
4.Spread a cake form, 26cm diameter, with butter and sprinkle with flour. Pour in half of the mixture, add the apples and cover with the rest of the mixture.
5.Bake the apple cake in a preheated oven, at 180˚ C, for about one hour. When baked, remove from the oven and let it cool for about ten minutes, with the form.
